Wild, earthy, fragrant, intense and dark.

Lithostylis creates original wines with a unique voice.

Daring and elegant, these artisan wines are hand-crafted from Pinot Noir and Chardonnay grown in the cool-maritime heart of South Gippsland.

The Place

Nestled in the gently undulating foothills of Leongatha, our estate vineyard ‘The Red Dwarf’ is planted out predominantly to Pinot Noir, with a smattering of Chardonnay.

Chosen for it’s deep red, volcanic soil and cool-maritime climate, The Red Dwarf consistently produces wines of fragrance, elegance and intensity.

Characterful and compelling wines with a definite sense of place.

Journey

Secateur-hardened and vintage-tempered, Dean Roberts has been growing grapes and making wine in South Gippsland since 2005. He has grown or made wine in this flourishing region from; Viognier, Sauvignon Blanc, Semillon, Riesling, Gewürztraminer, Chardonnay, Marsanne, Rousanne, Shiraz, Merlot, Cabernet Sauvignon, Cabernet Franc and Pinot Noir.

It’s not through lack of experimentation then, when he says: “The greatest varieties for South Gippsland are Chardonnay and Pinot Noir.”

Pinot Noir and Chardonnay are ideally suited to producing consistent, high-quality wines which speak of their place of origin and deliver more than just ‘varietal flavour’.

Winemaking

Winemaking is a series of seemingly simple, but inter-related decisions that affect wine-style and the preservation of quality.

The idea of winemaking as something dissociated from grape-growing is a foreign concept at Lithostylis, where the continuum of viticulture-winemaking is an unbroken cycle. A feedback loop, where one seasons lessons are fed back into the following seasons decision-making.

We prefer a ‘hands off’ philosophy; avoiding movements, additions and subtractions, unless absolutely necessary. No habitual formulas or recipes, just a sensitive and responsive attitude to “what the wine is trying to say” or “who the wine wants to be”.

Perhaps this stems from our other life as musicians, where the most fundamental skill is listening.
